Crust:
10-12 small Sugar cookies, crumbled very fine
1/2 stick of butter, melted
1/3 cup of sugar
3 packages of cream cheese (1 light and 2 regular)
3 eggs
1 1/2 cup of Pumpkin filling
1/3 cup of heavy cream
1t of vanilla
1/4t of salt
¾ cup of sugar
Spices - pinch of each:
cloves, ginger, cinnamon, apple pie spice, nutmeg
Pre-heat oven to 325
In bowl, mix together sugar cookies crumbs and add butter a little bit at a time. Add sugar, and get mixture where you can mold together. Mold into spring form pan. Bake for 10 - 12 minutes, until slightly golden brown. Set aside and cool.
In standing mixer or bowl, add cream cheese. Beat with mixer or hand-held mixer. Add eggs in, one at a time, until all is incorporated. Add pumpkin filling, heavy cream, vanilla, salt, sugar and spice mixture. Blend together until all is smooth.
Pour mixture into crust. Bake at 325 for 50 - 55 minutes.
