1 cup of craisins
1/2 cup of hot water
2t of balsamic vinegar
1t of sherry vinegar
1/3 cup of balsamic vinegar
2t of red wine vinegar
1/2 vanilla bean, split in half, seed removed
Salt/pepper
1/2 cup of olive oil, extra virgin
In small bowl add cranberries, water and 2T of balsamic vinegar. Let sit on counter for 45 minutes - 1 hour.
Drain off 1/4 cup of liquid then add the mixture to a blender or food processor. Puree on high for 5-10 seconds. Scrap sides towards bottom. Repeat until smooth.
Add remaining ingredients, execept the olive oil. Puree until smooth. With food processor or blender on, drizzle olive oil in slowly.
Season with salt and pepper to taste. Serve on field greens.
